Arugula Salad with Apples 

& Cider Dressing 

Serves 4

4 large handfuls of pre-washed baby arugula

¼ cup golden raisins

¼ cup dried cranberries

1 Golden Delicious or Gala apple, cored and chopped

⅓ cup brie cut into ¼ inch pieces, rind removed

⅔ cup whole vanilla flavored almonds, coarsely chopped

Cider Dressing:

2 Tbsp. veggie oil

2 Tbsp. apple cider

1 Tbsp. apple butter

1 Tbsp. maple syrup (pure 100% maple syrup)

¼ tsp. apple cider vinegar (optional)

½ tsp. salt

½ tsp. light brown sugar


For dressing:  In a medium bowl, combine dressing ingredients: apple cider, apple butter, maple syrup, cider vinegar, salt, and brown sugar and whisk well to combine.  Add vegetable oil in a steady stream, whisking vigorously to incorporated.

For salad:  Place arugula in a large bowl.  Drizzle dressing over arugula and toss well until evenly coated.  Divide arugula among 4 bowls.  Sprinkle each salad with golden raisins, dried cranberries, and chopped apple.  Top with brie pieces and chopped vanilla almonds.  Garnish with an apple slices.

Note on salad greens:  If your child does not like arugula, then substitute with red or green leaf lettuce.

Note on apple butter: Apple butter can be found in the jelly isle of most food stores.  If apple butter is unavailable, apple sauce may be substituted in the same quantity, but the rich apple flavor of the dressing will suffer somewhat.

Note on almonds:  Candied almonds also work well with this salad, as do presoaked raw almonds.
