Portobello & Wasabi Crostini



Portobello & Wasabi 


Makes 12-16 Hors D’oeuvres

2 portobello mushrooms cleaned and sliced into 1/2 inch strips

2 Tbsp. salted butter

1 cup baby arugula, pre-washed

1/2 tsp. salt

3/4 tsp. grated sushi wasabi sauce

3 Tbsp. mayonnaise

1 baguette cut into 1/4 inch thick slices, and halved to make bite size servings


Warm butter in a large frying pan over medium heat.  Add sliced portobello being sure not to crowd the mushrooms.  Sauté for 3-5 minutes until mushrooms begin to brown.  Turn and brown the other side for 3-5 minutes.  Remove from heat, cool slightly, and cut each portobello strip in half.

In a small bowl, combine wasabi, mayonnaise, and salt.

To assemble: 

Spread approximately 1/2 tsp. wasabi mayonnaise on each bread slice.  Place one leaf of arugula on wasabi mayonnaise, then top with one strip of portobello.  Arrange on a platter and serve immediately.

Note: Grated sushi wasabi sold in tubes can be found in the international food isle of supermarkets or international food stores.
