Artichoke Frittata

Makes 30 Hors d’oeuvres

4 large eggs

1/4 cup fine dry bread crumbs

1/2 tsp. salt

1/8 tsp. pepper

1/2 tsp. crushed oregano

1/2 cup onion finely diced

1 clove garlic minced (about 1/2 tsp.)

2 Tbsp. butter

2 cups parmesan cheese, shredded

2 (6oz.) jars marinated artichokes, drained and chopped


Preheat oven to 350༠F.

In a large bowl, combine eggs, breadcrumbs, salt, pepper, and oregano.  Set aside.  In a medium skillet, melt butter over medium-low heat.  Add onions and saute for 10-12 minutes until translucent.  Add garlic and saute for an additional 2 minutes.  Remove from heat and add cheese and artichokes.  Combine with egg and crumb mixture.  Pour into a 11 x 7 1/2 inch pyrex dish and bake for 30 minutes until light brown.  Remove from oven and allow to cool slightly.  Cut into 1 inch squares.  May be served hot or cold.
