Homemade Breakfast Sausage

Serves 8-10

1 lb. ground pork

1 lb. ground beef

1 lb. ground veal

4 cloves garlic

1 bunch scallions (white part & 2 inches of green), minced

1 lg. red pepper, seeded and minced

2 tsp. ground cumin

1 tsp. dried thyme

1 tsp. fennel seeds, crushed

2 tsp. salt

1/4 tsp. pepper

pinch ground nutmeg


Mix the pork, beef and veal thoroughly in a large mixing bowl.  Add the garlic, scallions, green pepper, cumin, thyme, crushed fennel seeds, nutmeg, salt and pepper.  Mix thoroughly with your hands.  Divide the meat mixture in half.  Roll each half into a log seven inches in diameter.  Wrap the logs in plastic wrap and refrigerate fo 2-3 hours.  Cut the sausage logs into 1/2 inch slices.  Fry the patties in a non-stick skillet until well browned, about 5 mintue per side.  Freeze any unused pattieswith wax paper disks separating patties.
