Pear & Grape Salad with Honey Pear Dressing

Ingredients:

Salad:

5 cup sweet baby lettuces

2 bartlett pears, cored and sliced into 1/4 inch wedges

1 cup red seedless grapes, halved

1/4 cup honey or vanilla flavored goat cheese (optional for kids)

1/4 cup raw almonds

Dressing:

2 Tbsp. pear nectar

2 Tbsp. honey

1/2 tsp. salt

1/16 tsp. fresh garlic, crushed through a garlic press

1 tsp. lemon juice

1/4 cup vegetable oil

Directions:

In a medium bowl, combine pear nectar, honey, salt, garlic, and lemon juice.  Add vegetable oil in a steady stream whisking vigorously to combine.

Place baby lettuces in a large bowl.  Drizzle dressing over salad greens and toss to coat.  Divide lettuces among 4 salad plates, then top each salad with 1/4 of the pear slices, 1/4 cup grapes, 1 Tbsp. crumbled goat cheese, and 1 Tbsp. almonds.   Serve immediately.
