Thyme Stuffed Roast Chicken

The scent of roasting thyme will perfume your home evoking daydreams of crushing wild thyme underfoot

while traversing the French countryside.

Ingredients:

1 roaster chicken, preferably organic (3 lbs.)

1 cup fresh thyme branches

2 Tbsp. salted butter

1 tsp. salt

1/4 tsp. fresh pepper

Directions: 

Preheat oven to 350༠F.  Rub the outside of the chicken with butter, then rub the cavity and the outside of the chicken with salt and pepper.  Pack the thyme branches into the chicken cavity, truss chicken if desired, place in a roasting pan.

Roast, basting every 15 minutes, for 1 1/2 hours, or until juices run clear.  Remove from oven and allow to stand, covered with foil, for 10-12 minutes prior to carving.

    The entire family loved this recipe! The fragrance of thyme filled our home as it roasted, and the kids kept asking what smelled so good and when would dinner be ready.
