Tuscan Summer Pasta

Serves 6

3 cups fresh baby spinach, chopped

1 cup roasted yellow peppers strips (or roasted red peppers if your children prefer)

3 cups garden fresh tomatoes, chopped into 1 inch pieces (preferably cherry or grape tomatoes)

3/4 cup freshly grated parmesan cheese

3/4 lb. farfalle pasta (or your favorite fresh pasta)

3/4 cup fresh basil, chopped finely

1/4 cup extra virgin olive oil

1 Tbps. fresh lemon juice

1/2 tsp. fresh garlic, pressed through a garlic press

3/4 tsp. salt


In a large bowl, combine the tomatoes, salt, garlic, olive oil, lemon juice, and basil.  Toss well Allow flavors to marry for 10 minutes while preparing the pasta.

In a large pot, bring 8 cups water to a boil.  Add pasta and cook according to package directions until al dente.  Drain and place pasta onto basil tomato mixture and toss well.  Add roasted yellow peppers, spinach, and parmesan cheese, and toss.  Serve immediately, passing extra parmesan cheese at the table.

Variation: Serve Tuscan Summer Pasta over a bed of thinly sliced fresh garden tomatoes.
