Awesome Grilled Asparagus

Serves 4

According to NYC children’s etiquette instructors, it is okay to eat asparagus with your fingers.  Have napkins ready!

Ingredients:

2 lbs. asparagus, well washed and ends trimmed

2 Tbsp. olive oil

2 tsp. fresh lemon juice

1/2 tsp salt

A grind of fresh pepper (if desired)

Directions:

Heat up grill to medium-high heat 400༠F.

While the grill is heating, in a small bowl whisk together olive oil, lemon juice, and salt.  Place trimmed asparagus onto a large flat platter, drizzle with the olive oil mixture and toss to coat evenly.

Place asparagus on the grill perpendicular to the grill grates.  Leaving the grill lid slightly ajar, cook asparagus for 3-4 minutes or until slightly browned a the ends and on the grate lines.  Then, turn the asparagus and continue to grill for an additional 3-4 minutes.  Remove from grill and arrange on a warmed decorative platter.  Serve immediately.  Garnish with a grind of fresh black pepper and lemon slices  if desired.
