Chickpeas with Garlic Sausage

2 cans chickpeas (14.5 oz . can), drained

2 fresh bay leaves

1 tsp. minced fresh thyme, plus 6 small sprigs for garnish

1 tsp. salt

1/4 tsp. black pepper

3 mild garlic sausages

1 Tbsp. butter


Prick sausages with a fork, place in a saucepan with 1 cup water and bring to a boil for 5 minutes over medium-high heat.  Drain. Melt butter in a medium skillet, over medium heat, add the sausages and saute until brown on all sides, about 7 minutes.  Remove sausages from pan cut into 1-inch pieces.  In the same skillet add drained chickpeas, minced thyme, salt, pepper, bay leaves, and 1/4 cup water.  Bring to a boil over medium-high heat for 4 minutes.  Add sliced sausages to chickpeas, toss, remove from heat, cover with a lid and allow to rest for 5 minutes while flavors marry.  Remove bay leaves, garnish with thyme sprigs, and serve warm with a crusty french baguette.
