Fig & Cantaloupe Salad with Baby Lettuce

Serves 4

The salty ham and sweet cantaloupe kept children coming back for more.

For best results, use in season cantaloupe and fresh black mission or other high quality figs.

Ingredients:

Salad:

6 cups pre-washed sweet baby lettuce

¼ cup finely diced fresh fig

¼ cup finely diced fresh cantaloupe

¼ cup finely diced honey cured ham

¼ cup finely diced pecans (optional)

Dressing:

2 Tbsp vegetable oil

1/16 tsp garlic crushed

2 Tbsp. honey

1 Tbsp. maple syrup

1 tsp. fig jelly

⅛ tsp. salt

½ tsp. fig infused balsamic vinegar

Directions:

In a small bowl, whisk together ingredients for the dressing: vinegar, salt, jelly, maple syrup, honey, and garlic. Slowly add the vegetable oil whisking vigorously to incorporate well.

Place pre-washed baby lettuce in a large bowl, drizzle dressing over the lettuce and toss well. Divide lettuce leaves among 4 salad plates.

Top each salad with 1 Tbsp. of cantaloupe, fig, ham and pecans. Serve immediately.
